The Healthy Habits Weeks aren’t complete without a ‘What I Eat in a Day’.🍽

‘’When I wake up, my first thought is: coffee!

For breakfast, I enjoy Carrot Cake Oatmeal with oat milk, rolled oats, chia seeds, cinnamon, grated carrot, apple, soy yogurt, and a mix of blueberries and grapes.

Lunch consists of Okonomiyaki, a Japanese vegetable pancake. I make a batter with buckwheat flour, whole wheat flour, oat milk, water, a flax egg, miso, salt, and sesame seeds. I mix in chopped carrots, onions, and garlic, then cook the pancake with chestnut mushrooms, finishing with vegan mayo, furikake, spicy okonomi sauce, and fresh coriander.

Dinner is a reheated soup from the day before, a blend of fennel, carrot, butternut squash, parsnip, and red lentils. It’s garnished with coriander, lime, and homemade whole wheat-sesame pita.

Snacks include granola (oats, dates, almonds, chia, cinnamon, oil, and agave), an apple, and in the evening, I indulge in dark chocolate with sea salt and almonds from Tony Chocolonely, paired with a large cup of tea.’’
