Is it even possible, healthy and easy? Sustainable and fast? Balanced yet varied? Easy peasy lemon squeezy! With the right essentials at home, everyone can eat vegan quickly.

I've just realised that the greatest strength of vegan is the connivence Not the low footprint or health benefits. No, it is ease of plant-based food that makes it such a perfect match with the current zeitgeist. So for everyone with a busy agenda who wants to live a healthy and more sustainable life. You're set! :)

A quick vegan recipe starts with the right essentials. In the category fresh-frozen ingredients make sure to stock up on; spinach, broccoli, cauliflower and broad beans. They make for a perfect base. Always have your favorite canned beans, coconut milk and tomatoes. And who can live without fresh herbs such as parsley, coriander and ginger. And off course fresh lemon, lime, avocado and tomatoes.

My latest easy vegan recipes discovery: 'The 4.5 minute kale, tofu and chickpea curry'! The name can use some more work.

This ridiculously easy meal with a nice bite from the tofu and a soft contrast with creamy coconut and kale sauce. Serve with your favorite bread.

Instructions:

You start by draining the tofu (don't forget to dry it, you want them dry). Then cut the tofu into 1 cm2 pieces and remove the hard stem from the kale. Chop the ginger into very small pieces and rinse the chickpeas.

Take a large flat pan, heat it over a high heat and pour in oil (don't be shy). Bake the tofu for 2 minutes until it is nicely browned on all sides. Toss in the julienned onion, kale and ginger. After 1 minute you can add your favorite Indian spices (cumin, salt, chili flakes, curry and pepper is a must) and a few tablespoons of tamari.

When the vegetables have shrunk , add coconut milk, chickpeas and tomatoes. Always taste if everything is nicely seasoned. Easy vegan does it!

My all time favorite easy vegan recipes. Creamy Broccoli Vegan Pasta.

It's a bit crazy to emphasise this in a blog about easy meals but this is a quick vegan recipe. Guys really, this creamy trooper will be served within 20 minutes. And has saved my life more than I can remember.

Instructions:

Cook your favorite pasta. Go for shells or orzo if you want to put something special on the table.

You make this heavenly sauce with blended white beans, lemon juice and nutritional yeast. Season with chili flakes, salt and pepper.

Fry a large onion and 100 grams of broccoli per person.

Mix the pasta and vegetables together and pour the creamy vegan pasta sauce over it.
