Ingredients (for 1 serving):
60 grams whole grain oat flakes
100-120 ml almond milk (adjust for desired consistency)
15 grams protein powder
2 grams baking powder
Tablespoon honey (or more!)
Vanilla extract
Teaspoon gingerbread-like spices
Optionally, vegan 'kruidnoten' (spice nuts) for topping
Sunflower oil for greasing
Kitchen utensils:
Blender or food processor
Wooden spoon for mixing
Mixing bowl(s)
Small baking molds

Instructions:
Preheat the oven to 175 degrees Celsius.
Weigh your ingredients.
Blend 50 grams of oatmeal into a fine flour-like structure, leaving the remaining 10 grams coarse.
In a bowl, mix oat flour, baking powder, gingerbread-like spices, coarse oat flakes, and protein powder.
Add honey, almond milk, and vanilla extract; mix into a thick, pourable batter.
Grease baking tins with oil.
Pour batter into baking tin(s), optionally topping with 'kruidnoten.'
Bake for ±20 minutes, checking for color every 5 minutes. As it lacks eggs, it can burn easier. After about 20 minutes, check with a skewer; it's done when the skewer comes out clean.
Hack! Prepare oats in advance; bake for 15 minutes instead of 20. Store in the refrigerator, and reheat for a delicious warm brekkie!
